Apart from my Kodiak Cakes Chocolate Chip Cookies (which may or may not be considered a classic by now….by mostly just me, but whatevs), these low fat Lemon Cake Cookies are maybe my best creation to date.
The texture, the taste, everything bursts lemon cake perfection. (Yes, I realize it’s almost the end of September and I have no business posting a lemon cookie recipe right now but YOU NEED DIS. Trust me.)
Low Fat Lemon Cake Cookies
- 1 egg
- ¾ cup sugar
- ¼ cup plain, nonfat Greek yogurt
- 1 ½ tbsp. lemon extract
- ¼ tsp almond extract
- 2 ½ tbsp. olive or coconut oil (melted & cooled)
- 1 ¼ cups AP or WW pastry flour
- ¼ tsp salt
- ½ tsp baking powder
- ¼ tsp baking soda
Preheat oven to 375F. In a large bowl, combine egg, sugar, yogurt, lemon extract, almond extract, and oil. Beat with a whisk for 1-2 minutes. Add in flour, salt, baking powder, and baking soda. Mix with a spatula until dough comes together. Scoop onto a lined cookie sheet (I use the OXO small cookie scoop). Makes about 24 cookies. Bake for 10 minutes and devour!
