Let’s all conveniently IGNORE the fact that we haven’t posted on here in fiveever because I (Susan here, hi) have A.LOT.OF.RECIPES to catch you up on (especially if you’re not following my Instagram – which why wouldn’t you be?).
First in line are these amaaaazing 100 calorie Oatmeal Banana Muffins. No sugar added, gluten free, and low fat (because muffins are the perfect pre-workout food so fat stayed low on purpose). What more could you want in a snack? Tell me.
100 Calorie Oatmeal Banana Muffins
• 2 cups oatmeal
• 2 tsp baking powder
• ½ tsp cinnamon
• ¼ tsp salt
• 3 medium bananas, mashed
• ½ cup plain, NF Greek yogurt
• ½ cup unsweetened applesauce
• 1 tsp vanilla extract
• 2 egg whites
• Add ins of choice (but this will change calorie count): chocolate chips, walnuts, dried fruit, coconut flakes, etc
DirectionsPreheat oven to 400F. Line your muffin tin (or grease well). Process oatmeal into a flour in a blender or food processor. Mix oat flour, baking powder, cinnamon, and salt in a bowl. Mix in mashed banana, Greek yogurt, applesauce, vanilla, & egg whites. Fold in add-ins, if desired. Spoon into muffin tin and bake for 15-20 minutes.
