These banana pancakes are SO easy to throw together (really people, it’s just 2 ingredients) and packed with way more protein than your typical pancake (13 grams!). They’re also grain-free if you’re into that sorta thing.
Because they’re flourless, they’re a little flimsy and hard to flip, so be careful and stick to making smaller pancakes. Isn’t better to have a sky-high stack anyways??
Side note: If you’re looking for that thick, carby texture of your typical grain-FULL pancake, you won’t find it here — sorry! Think French toast texture instead.
2 Ingredient Banana Pancakes
• 1 banana
• 2 eggs
• Optional: 1/4 tsp cinnamon
DirectionsIn a blender or food processor (or by hand if you’re short on cardio), blend banana, eggs, and optional spices until smooth.
Heat a flat pan or griddle on medium-low heat and lightly grease. Cook like you would regular pancakes, but be sure to make smaller cakes since they can be difficult to flip. Makes 7-8 small pancakes (~3 inch diameter).
